One of my favorite cuts of meat is the beef short ribs. When you have it sliced thinly with the bone in. I like to sweeten this up but I also like to spice it up. Here is the rub I use:
2 tablespoon brown sugar
2 tablespoon chipotle powder
1 tablespoon salt, paprika, chili powder, garlic powder, onion powder
2 teaspoon coriander, cumin
Mix together, sprinkle generously onto the short ribs. Let is sit for 1-2 hours so that the mix has time to stick to the meat.
Heat up your grill to the highest temperature, you want to sear these. Make sure you take these out atleast 15-20 minutes to let it cool down to room temperature before you throw them on the grill.
Flip them over about 4-6 minutes into the grilling process. Watch out they can be fatty and marbled so watch for the flames and burning.
Flipping over and cook for another 3-6 minutes depending on what you like. They are pretty marbled so I would not worry about them getting to overcooked. With that said I like it as a medium to medium well.
You should get this wonderfully flavored piece of beef. The short rib is also relatively a cheap piece of meat. If you put enough rub on there it should form a nice crust. I find that adding just a pinch of salt right after you take them off the grill, enhances the flavor a bit also.
